The tteokbokki that goes viral is almost never the mild one, and the shops fans line up for sell heat in numbered steps — 단계 (dangye), levels, sometimes five of them, sometimes more. The menu picture looks identical at every step. The only way to know what is arriving is to ask: 맵기 조절 돼요? (maepgi jojeol dwaeyo?), "Can you adjust the spice level?" and 이거 몇 단계예요? (igeo myeot dangyeyeyo?), "What level is this one?"

How do you order a bowl you can finish?

The order is taken in about fifteen seconds, usually at a counter, and the level is the only decision that really matters.

  1. 맵기 조절 돼요? first, because some shops cook one pot all day and the honest answer is no.
  2. 이거 몇 단계예요? pointing at the photo everyone posts, which is often three or four steps up from where a first-timer should start.
  3. 제일 안 매운 걸로 주세요 if the answer sounded high — the mildest level at a spice-level shop is still hotter than most street tteokbokki.
  4. 중간 맛으로 해 주세요 if you have eaten Korean spicy food before and want the version the shop is known for.
  5. 사리 추가해 주세요 at the end, since noodles, dumplings, or fried squares soak up sauce and make a hot bowl survivable.

What do Korean speakers say back?

Counter staff answer in half sentences and then ask you one thing back, so the useful skill is catching the question.

What usually goes wrong at a tteokbokki shop?

The usual one is ordering by the photo. A bowl that looks mild in a video is often the level the shop built its reputation on, and 이거 몇 단계예요? asked before you pay takes two seconds — after it arrives, the pot is already cooked and there is nothing to adjust.

The other is treating spice as the only thing to mention. If chili, seafood, or wheat is a real problem for you rather than a preference, say so at the counter instead of hoping the mild level is safe; 맵기 조절 돼요? handles heat, not ingredients.
